Hyssop is the cleansing herb of the Old Testament: Purge me with hyssop, and I shall be clean (Psalm 51:7) is its definitive appearance in Western sacred literature, and it was used in the ritual purification described in Leviticus and Numbers. The hyssop branch was used to apply the blood of the Passover lamb to the doorposts. In Roman religion it was a temple purification herb. Whether the biblical hyssop is the same plant as the European Hyssopus officinalis is debated (the Middle Eastern botanical may have been a different species) but the European herb absorbed the biblical associations through centuries of use in Christian ceremony.
